Coconut Milk Curry
Ingredients:
1 tbsp vegetable oil
1 onion, chopped
3 cloves of garlic, minced
1 tbsp ginger, grated
2 tbsp curry powder
1 can of diced tomatoes
1 can of coconut milk
Salt and pepper, to taste
Your choice of protein (chicken, beef, tofu, etc.)
Vegetables of your choice (carrots, bell peppers, zucchini, etc.)
Rice, for serving
Instructions:
Heat the oil in a large pot over medium heat. Add the onion and sauté until softened, about 5 minutes.
Add the garlic and ginger and sauté for an additional minute.
Stir in the curry powder and cook for 1-2 minutes, until fragrant.
Add the diced tomatoes, coconut milk, salt, and pepper to the pot and bring the mixture to a simmer.
Add your choice of protein and vegetables to the pot, and cook for about 10-15 minutes, or until the protein is cooked through and the vegetables are tender.
Serve the curry over rice and enjoy!
You can adjust the quantity of curry powder or use different type of curry powder to adjust the heat level or flavor you like. You can also add some fresh herbs like cilantro, basil or mint as a garnish before serving.
Coconut Milk Fried Rice
Ingredients:
1 tbsp vegetable oil
1 onion, chopped
2 cloves of garlic, minced
1 cup of cooked rice
1/2 cup of frozen peas and carrots
1/2 cup of coconut milk
1 tablespoon of soy sauce
1 tablespoon of fish sauce (optional)
2 eggs, lightly beaten
Salt and pepper, to taste
Green onions, chopped for garnish
Instructions:
Heat the oil in a large pan or wok over medium heat. Add the onion and sauté until softened, about 5 minutes.
Add the garlic and sauté for an additional minute.
Add the cooked rice, frozen peas and carrots, coconut milk, soy sauce, fish sauce (if using) and stir well.
Cook for about 2-3 minutes or until the rice is heated through and the coconut milk has been absorbed.
Push the rice mixture to one side of the pan and add the beaten eggs to the other side. Cook the eggs, stirring occasionally, until they are scrambled.
Mix the eggs with the rice mixture.
Season with salt and pepper to taste.
Garnish with green onions, and serve.
You can also add other vegetables like bell peppers, mushrooms or even protein like chicken, shrimp or tofu for more variety.
Coconut Milk and Lime Soup
Ingredients:
2 tablespoons vegetable oil
1 onion, chopped
2 cloves of garlic, minced
2 tablespoons of grated ginger
2 cups of chicken or vegetable broth
1 can of coconut milk
1/4 cup of lime juice
2 tablespoons of fish sauce (optional)
1 teaspoon of sugar
Salt and pepper, to taste
Fresh cilantro, chopped for garnish
Instructions:
Heat the oil in a large pot over medium heat. Add the onion and sauté until softened, about 5 minutes.
Add the garlic and ginger and sauté for an additional minute.
Stir in the broth, coconut milk, lime juice, fish sauce (if using), sugar, salt and pepper.
Bring the mixture to a simmer and let it cook for about 10 minutes.
Taste and adjust seasoning as needed.
Ladle the soup into bowls and garnish with fresh cilantro before serving.
You can also add some diced chicken or shrimp for some extra protein and make it more filling.

Coconut Milk and Banana Smoothie
Ingredients:
1 ripe banana
1/2 cup of coconut milk
1/4 cup of Greek yogurt (optional)
1/4 cup of honey or maple syrup
1/2 teaspoon of vanilla extract
1 cup of ice
1/4 cup of unsweetened shredded coconut (optional)
Instructions:
Peel the banana and place it in a blender.
Add the coconut milk, Greek yogurt (if using), honey or maple syrup, vanilla extract and ice to the blender.
Blend until smooth and creamy.
If using, add unsweetened shredded coconut and pulse it a few times to mix it in.
Pour the smoothie into a glass and enjoy it immediately!

1/2 cup of granulated sugar

In a medium saucepan, mix together the sugar, cornstarch, and salt.
Slowly pour in the coconut milk, while whisking constantly to prevent lumps from forming.
