Ingredients:
2 chicken breasts
1 sweet potato, diced
1 bell pepper, sliced
1 onion, sliced
Olive oil
Your favorite paleo-friendly spices (such as paprika, garlic powder, and onion powder)
Instructions:
Preheat your grill to medium-high heat.
Season the chicken breasts with the paleo-friendly spices.
Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165 degrees F.
While the chicken is cooking, toss the diced sweet potato, sliced bell pepper, and sliced onion with a drizzle of olive oil and a pinch of the paleo-friendly spices.
Once the chicken is done, remove it from the grill and let it rest for a few minutes.
Place the vegetables on the grill and cook for 8-10 minutes, or until tender.

Instructions:
In a large slow cooker, combine the ground beef, diced tomatoes, onion, bell pepper, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
Stir to combine.
Cover the slow cooker and cook on low for 8 hours, or until the beef is tender.
Serve the chili with chopped fresh herbs and a side of guacamole, if desired. Enjoy!

In a small bowl, whisk together the olive oil, lemon juice, herbs, salt, and pepper.
Place the salmon fillets in a baking dish and brush with the olive oil mixture.
Bake the salmon for 12-15 minutes, or until it is cooked to your desired level of doneness.
While the salmon is cooking, make the avocado salsa by stirring together the mashed avocado, diced tomato, diced onion, chopped cilantro, and lime juice.

Toss the sliced zucchini, eggplant, and bell pepper with the olive oil mixture.
Place the vegetables on the grill and cook for 8-10 minutes, or until tender.
While the vegetables are grilling, heat up the cooked quinoa and chickpeas in a small pan over medium heat.
Serve the grilled vegetables over a bed of the quinoa and chickpeas. Enjoy!

Salt and pepper, to taste
Cooked cauliflower rice, for serving
Instructions:
Heat a large pan over medium-high heat. Add the olive oil and minced garlic, and sauté for 1-2 minutes, until fragrant.
Add the sliced beef to the pan and cook until browned.
Add the broccoli florets to the pan and stir to combine.
In a small bowl, whisk together the coconut aminos, rice vinegar, sesame oil, salt, and pepper. Pour the stir fry sauce over the beef and broccoli in the pan.
Stir to coat the beef and broccoli in the sauce, and cook for an additional 2-3 minutes, or until the broccoli is tender.
Serve the beef and broccoli stir fry over a bed of cooked cauliflower rice. Enjoy!
